Can I get some tips on how to finish a stock when I can't get a grab combo against a ZSS? Some people will air dodge a down throw (free U-Special) but I've got no idea if they jump it. I've thought about ledge trumping, but dunno how to get a solid edgeguard or punish them for recovering high.

reverse Up B is a great edgeguarding tool if you do it when you run off the stage, you'll be able to clip the stage while keeping the hitbox If you can't get a down throw combo don't bother using down throw, throw them off the stage or back throw because down throw does the least damage.
you can also use down tilt it has less knockback than down throw

B-air is your best kill option, in my opinion. FH double B-air and SH B-Air are very close to being safe on shield, and it has nice range and knockback. Outside of that, try using the back hitbox of U-smash. Like, dashing towards them, then dashing away and using U-smash is a solid mix-up.
As Boundaries said, just throw them offstage and try to edgeguard them from the ledge with B-air or D-smash, when they're at higher percents.
It's good to know certain things like frame traps and trump options, but good players adapt to these, so you're probably just better off practicing landing your safer kill moves.
I've found empty hop F-smash works pretty well, sometimes.

Down throw to uair is Docs bread and butter, and his combos get better when up against fast-fallers, down throw into tornado or even up-b at kill percents
Every character is susceptible to d-throw, to uair to nair to possible d-smash or u-smash. (Usually mid-percents)
I feel like Docs tornado gives him more upward recovery in the newest patch, and he has good edge guard tools.
